Valentine's Day Cupcakes

Ingredients
  

  • ½ cup coconut oil (melted)
  • ¾ cup sugar
  • 2 large eggs (room temp)
  • cups flour
  • ½ tsp salt
  • ½ cup unsweetened almond milk
  • tsp baking powder
  • tsp vanilla bean paste
  • 1 pack Organic Vanilla Frosting Mix

Instructions
 

  • Preheat oven to 350 °F
  • Make Batter: Combine oil and sugar in a mixer or large bowl. Next, add eggs, and mix for one minute. Then, slowly add the remaining ingredients and mix on medium for 1 minute or until thoroughly combined. Make sure to scrape down the sides.
    ½ cup coconut oil, ¾ cup sugar, 2 large eggs, 1¼ cups flour, ½ tsp salt, ½ cup unsweetened almond milk, 1¾ tsp baking powder, 1½ tsp vanilla bean paste
  • Bake: Line a muffin tin with cupcake liners, and pour batter into each liner, filling 3/4 of the way full. Bake at 350 for 13-17 minutes.
  • Frost, Decorate, and Serve: Make the vanilla frosting mix according to the directions on the packaging. Frost and decorate cupcakes. Serve and Enjoy!
