Ingredients
  

Strawberry Bread

  • 2 eggs
  • ¼ cup plain yogurt
  • ¼ cup vegetable oil
  • 2 tsp vanilla
  • cups whole wheat flour
  • cup sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • cups fresh, diced strawberries

Vanilla Glaze

  • 1 cup confectioners sugar
  • ½ tsp vanilla
  • 2 tsp heavy cream

Instructions
 

  • Preheat the oven to 350°F, and grease an 8''x 4" loaf pan. 
  • Whisk together the flour, sugar, baking soda, salt, and baking powder in a large bowl.
    1½ cups whole wheat flour, ⅔ cup sugar, 1 tsp baking soda, 1 tsp baking powder, ½ tsp salt
  • In a separate bowl, beat the eggs until evenly yellow (but not frothy). Stir in the yogurt, oil, and vanilla. Stir until evenly mixed. 
    2 eggs, ¼ cup plain yogurt, ¼ cup vegetable oil, 2 tsp vanilla
  • Pour the wet mixture into the dry mixture and mix until there are no more flour traces. 
  • Gently fold in the strawberries, then pour the batter into the loaf pan. 
    1½ cups fresh, diced strawberries
  • Bake for about 40 minutes or until a toothpick in the center comes out clean. 
  • Let the bread cool in the pan for 10 minutes. 
  • While the bread is baking/cooling, make your vanilla glaze by mixing all the ingredients and whisking until combined and creamy. 
    1 cup confectioners sugar, ½ tsp vanilla, 2 tsp heavy cream
  • Remove the bread from the pan and let it cool a little longer. 
  • Pour the glaze over the top, and slice the strawberry bread into slices. Serve and enjoy!
