Instructions
Preheat the oven to 350°F, and grease an 8''x 4" loaf pan.
Whisk together the flour, sugar, baking soda, salt, and baking powder in a large bowl.
1½ cups whole wheat flour,
⅔ cup sugar,
1 tsp baking soda,
1 tsp baking powder,
½ tsp salt
In a separate bowl, beat the eggs until evenly yellow (but not frothy). Stir in the yogurt, oil, and vanilla. Stir until evenly mixed.
2 eggs,
¼ cup plain yogurt,
¼ cup vegetable oil,
2 tsp vanilla
Pour the wet mixture into the dry mixture and mix until there are no more flour traces.
Gently fold in the strawberries, then pour the batter into the loaf pan.
1½ cups fresh, diced strawberries
Bake for about 40 minutes or until a toothpick in the center comes out clean.
Let the bread cool in the pan for 10 minutes.
While the bread is baking/cooling, make your
vanilla glaze
by mixing all the ingredients and whisking until combined and creamy.
1 cup confectioners sugar,
½ tsp vanilla,
2 tsp heavy cream
Remove the bread from the pan and let it cool a little longer.
Pour the glaze over the top, and slice the strawberry bread into slices. Serve and enjoy!
