Ingredients
  

  • ½ cup graham cracker crumbs (gluten-free if needed)
  • 3 tbsp unsalted butter (melted)
  • ½ tsp sugar
  • 4 tbsp sugar
  • 1 cup heavy cream
  • 8 ounces cream cheese
  • 1 tbsp vanilla bean paste

Instructions
 

  • Combine cracker crumbs, melted butter, and ½ teaspoon sugar in a small bowl. Mix well. Divide between 4 small glasses or jars, press down. Refrigerate while making the filling.
  • Beat heavy cream until stiff peaks form. Remove from the mixing bowl.
  • Add cream cheese, 4 tablespoons of sugar, and vanilla bean paste to the same mixing bowl. Fold the whipped cream into the cheese mixture. Spoon filling over crusts and chill for 1–2 hours.
  • Top with whipped cream, berries, and mint sprigs—dust well with powdered sugar.
