Crumble Copycat Snickerdoodle Cookies

Ingredients
  

Cookies

  • 2 cups flour
  • ½ tsp salt
  • ½ tbsp baking powder
  • ¾ tsp cinnamon
  • 1 stick butter
  • 1 large egg
  • tsp vanilla extract
  • ¼ cup sugar
  • ¾ cup brown sugar
  • 1 tsp cinnamon for coating
  • 2 tbsp sugar for coating

Frosting

  • 1 bag organic vanilla frosting mix
  • 4 oz cream cheese softened
  • 1 stick butter
  • 1 cup powdered sugar
  • 1 tsp almond milk

Instructions
 

Cookies

  • Preheat your oven to 375 degrees and line two baking sheets with parchment paper.
  • Combine the flour, salt, baking powder, and cinnamon in a medium bowl.
  • Mix the melted butter, sugar, and brown sugar in a large bowl for one minute.
  • Add the vanilla extract and egg, mixing until just combined.
  • Slowly add in the dry ingredients, mixing until just combined.
  • Use a 2 tbsp cookie scoop to place the dough onto the baking sheets.
  • Sprinkle each ball of dough with the cinnamon-sugar mixture.
  • Bake for 12-15 minutes until the edges are lightly brown.
  • Let the cookies cool for 2-3 minutes, then transfer them to a baking rack for an additional 15 minutes.

Frosting

  • In an electric mixer, beat cream cheese and butter until creamy, about 2 minutes. Then, add all remaining ingredients and mix until combined.
