Preheat the Oven: Begin by preheating your oven to 350 degrees. While it warms up, lightly grease four mini loaf pans and set them aside.
Prepare the Apple Sauce: In a food processor, blend the cored gala apples with water until apple sauce is formed. This will take a bit of scraping down the sides. Pour 1/4 cup of apple sauce into a small bowl.

Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, apple pie spice, and cinnamon. Set this mixture aside.

Mix Wet Ingredients: Combine the softened butter and sugar for about 1 minute and 30 seconds using a mixer with the paddle attachment. Don't forget to scrape down the sides. Then, add the eggs, applesauce, coconut oil, and vanilla. Mix on low until well combined.

Combine Wet and Dry Ingredients: Slowly add the dry ingredients to your wet mixture and mix until fully combined. Be careful not to overmix.
Create a Brown Sugar Swirl: Mix brown sugar and cinnamon in a small bowl.
Layer the Batter: Spoon the batter into your prepared loaf pans, filling them 1/3 of the way. Sprinkle the brown sugar mixture on top (about 2-3 tsp). Then, spoon more batter evenly on top to fill 2/3 of the pan.
Bake and Cool: Bake for 23-27 minutes or until a toothpick comes out clean. Allow the loaves to cool for 45 minutes on a baking rack before gently removing them.
