Chocolate and Vanilla Layer Cake

Ingredients
  

Vanilla Cake (Makes 2 round 8" cakes)

Wet Ingredients

  • ¾ cup Greek Yogurt
  • ½ cup vegetable oil
  • ½ cup butter (softened)
  • 1 cup oat milk
  • 1 tbsp vanilla extract
  • 6 large eggs (room temperature)

Dry Ingredients

  • cups flour
  • 3 tbsp cornstarch
  • cup sugar
  • 4 tsp baking powder
  • ½ tsp salt

Chocolate Cake Ingredients

Dry Ingredients

  • ¾ tsp baking powder
  • ½ cup cocoa powder
  • 3/4 cup + 2 tbsp. flour
  • ½ tsp baking soda
  • ¼ tsp salt

Wet Ingredients

  • cup sugar
  • 1 tsp apple cider vinegar
  • 2 tsp vanilla extract
  • ¼ cup brown sugar
  • 2 eggs
  • cup vegetable oil
  • cup boiling water

Instructions
 

Make the Vanilla Cakes

  • Combine all dry ingredients in a bowl and whisk together.
    2¾ cups flour, 3 tbsp cornstarch, 4 tsp baking powder, ½ tsp salt
  • In the mixer, place butter and half of the sugar. Mix on medium-high until fluffy, about 1.5 mins. 
    2¼ cup sugar, ½ cup butter
  • Then add the remaining sugar and oil and mix again until fluffy, about 1 min.
    ½ cup vegetable oil
  • Begin adding eggs one by one, mixing after every 2 eggs. Add in vanilla and mix lightly.
    6 large eggs, 1 tbsp vanilla extract
  • Pour in half the dry ingredients and mix until combined. Then add in your milk and yogurt. Mix until combined.
    ¾ cup Greek Yogurt, 1 cup oat milk
  • Finally, add in the remaining dry ingredients and mix on medium-high until all the way combined.

Make the Chocolate Cake

  • In a mixing bowl, combine all dry ingredients and whisk.
    ¾ tsp baking powder, ½ cup cocoa powder, 3/4 cup + 2 tbsp. flour, ½ tsp baking soda, ¼ tsp salt
  • Add in eggs and oil, then mix on medium until combined. Add sugars, vanilla, apple cider vinegar, and water. 
    ⅔ cup sugar, 1 tsp apple cider vinegar, 2 tsp vanilla extract, ¼ cup brown sugar, 2 eggs, ⅓ cup vegetable oil, ⅔ cup boiling water
  • Mix on medium-high until well combined, about 3-4 minutes. Evenly fill each cake pan to ensure even baking.

Bake

  • Bake all 3 cake rounds at the same time for 30-35 minutes at 350 °F

Assembly

  • Place one vanilla layer top down, then frost with vanilla frosting on the top. Next, place the chocolate layer top down. Frost again with vanilla. Then add the 2nd vanilla cake layer and frost with chocolate frosting on the top and around the sides. Shaved chocolate pieces are optional.
