Ingredients
  

Apple Walnut Cookies

  • cups flour
  • ¾ tsp cinnamon
  • tsp apple pie spice
  • 1 tsp baking soda
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tbsp vanilla bean paste
  • 2 eggs (room temp)
  • 1 stick butter
  • ½ cup brown sugar
  • ¾ cup sugar
  • ½ cup chopped apple spice walnuts

Cinnamon Drizzle 

  • ½ cup powdered sugar
  • 2-3 tbsp almond milk
  • tsp apple pie spice

Instructions
 

  • Preheat Oven: Preheat your oven to 350 degrees and line a baking sheet with parchment paper.
  • Prepare Dry Ingredients: In a medium bowl, combine the dry ingredients (flour, baking soda, cinnamon, apple pie spice, and salt) and set aside.
  • Cream the Butter and Sugars: In a stand mixer equipped with a paddle attachment, mix the butter, granulated sugar, and brown sugar until the mixture turns creamy, which should take about 1 1/2 minutes.
  • Incorporate Eggs and Vanilla Bean Paste: Add the eggs, one at a time, mixing lightly after each addition. Then, incorporate the vanilla bean paste into the mixture.
  • Combine Dry Ingredients: Gradually pour in the prepared dry ingredients and mix quickly until they are incorporated. Afterward, switch the mixer to medium-high speed and continue mixing until everything is fully combined.
  • Fold in Walnuts: Using a rubber spatula, gently fold in the chopped walnuts to distribute them evenly throughout the cookie dough.
  • Scoop and Bake: With a 2-inch cookie scoop, place mounds of the cookie dough onto the prepared baking sheet. Add some chopped walnuts to the tops of the cookie dough for an extra touch of walnut goodness.
  • Baking Time: Bake the cookies for approximately 13-16 minutes or until the edges turn slightly brown.
  • Cooling: Once done, remove the cookies from the oven and allow them to cool for 5 minutes on the baking sheet before transferring them to a baking rack to cool further.
