Vanilla Strawberry Chia Pudding

This vanilla strawberry chia pudding is a great meal prep breakfast or snack. This chia seed pudding recipe is high in protein and has many health benefits, so it is something you can feel good about eating!

There are thousands of chia pudding variations out there, but for the most part, you only need two ingredients: chia seeds and your choice of milk. You can add flavors or sweeteners like vanilla, fruit, agave, etc. We went with strawberry and vanilla to achieve a fruity flavor with a smooth vanilla punch in this recipe. You’ll taste the difference!

Why is Chia Pudding Healthy?

Vanilla Layer

For the vanilla layer of this chia pudding recipe, you will need the following;

  • 1/4 cup organic chia seeds
  • 1 cup oat milk (soy or almond milk will also work)
  • 2 teaspoons vanilla bean paste
  • 1 1/2 tablespoons agave (maple syrup or date syrup will also work)

Strawberry Layer

For the strawberry layer of this chia pudding, you will need the following;

  • 1/4 cup organic chia seeds
  • 1/2 cup strawberry puree
  • 1/2 cup oat milk (soy or almond milk will also work)
  • 2 teaspoons vanilla bean paste
  • 1 1/2 tablespoons agave (maple syrup or date syrup will also work)

Ingredients
1/2 Cup organic chia seeds
1 1/2 Cup oat milk
4 Teaspoons vanilla bean paste
3 Tablespoons Agave
1/2 Cup strawberry puree
fresh fruit (for topping)

Instructions
Make the Vanilla Layer: Place all the “vanilla layer” ingredients in a bowl and stir well. Ensure the chia seeds are fully submerged in the liquid and there are no lumps. Cover and refrigerate overnight.

Make the Strawberry Layer: Place all the “strawberry layer” ingredients in a bowl and stir well. Ensure the chia seeds are fully submerged in the liquid and there are no lumps. Cover and refrigerate overnight.

When ready to serve, place the strawberry chia seed pudding into 4 small cups until half full. Top each cup with the vanilla chia seed pudding. Add any fresh fruit to the top, and Enjoy!
