Ingredients
- 1 ½ cups vanilla sugar
- 1/3 cup water
- 1 cup heavy cream
- 2 tbsp butter
- 2 tsp vanilla salt
Instructions
Add the water and sugar to a medium saucepan, cook over low heat for 5 to 10 minutes until the sugar dissolves. It’s important not to stir the mixture. Otherwise, sugar crystals might form.
To prevent sugar crystals from forming, wet a heat-proof silicone pastry brush with water and brush the sides of the saucepan. This will ensure a silky smooth sauce at the end.
Increase the heat to medium and boil uncovered until the sugar reaches about 350 degrees F on a candy thermometer and turns to a dark amber color (it takes about another 5 to 7 minutes, gently swirling the pan to “stir” the mixture if needed). The dark amber color indicates that the caramel flavor is fully developed.
Be careful, the mixture is extremely hot! Watch it carefully towards the end as it will go from beautiful to burnt quite quickly. Remove from heat, stand back and slowly add the cream. The cream will bubble violently and the caramel will solidify. Don’t be afraid, that’s normal.
Return the saucepan and simmer over low heat, stirring constantly, until the caramel dissolves and the sauce is smooth, about 2 to3 minutes.
Next add the butter, a tablespoon at a time, until fully incorporated. The butter adds another layer of wonderful and rich flavor to the sauce and makes it nice and shiny.
Remove pan from heat, then whisk in vanilla salt until dissolved.
Allow to cool to room temperature, at least 4 hours. Sauce will thicken as it cools. Store in heat proof containers with lid. Sprinkle more vanilla salt on top if desire.
Bonus step: very important! Try your best to refrain from drinking the whole container of sauce yourself! Yes, it is that good!
To serve, remove lid and slightly warm in microwave if desired.
