This particular recipe for vanilla pudding is so good, so quick, and so easy that you’ll never want to go back to store-bought pudding again. In addition to being super easy, there is also a lot of room to experiment with this recipe. So feel free to try a new flavor combination or experiment with different ingredients. This particular recipe uses just half of a vanilla bean and only takes about 10 minutes to prepare. We have tried it with both Planifolia (bourbon) vanilla beans and Tahitensis (PNG Tahitian). We prefer the Tahitensis. The vanilla beans help give the pudding that pretty speckled look that you see in a lot of different food creations. In fact, this recipe only uses 5 ingredients, well, 6 if you count the whipped cream, which we do!

Ingredients
- 2 2/3 cups whole milk
- ½ vanilla bean
- ¼ cup granulated sugar
- 3 tbsp cornstarch
- 2 egg yolks
- 3 tbsp whipped cream, optional
Instructions
- In a large saucepan, bring 2 cups of whole milk, sugar, the inside of the vanilla bean and the vanilla bean pod to a boil, stir frequently.
- Meanwhile, in a small bowl whisk together the remaining milk with the cornstarch, then whisk in the egg yolks.
- As soon as milk comes to a boil, reduce heat to low and carefully remove the vanilla bean pod. Gradually whisk in egg mixture, stirring quickly. Continue cooking and stirring until pudding thickens enough to thickly coat the back of a spoon, about 2 minutes. Chill pudding for at least 2 hours before serving, if desired.
- Tip : To make your pudding extra rich and creamy, stir in 3 tablespoons of whipped cream before serving
