Vanilla Plum Sorbet

This recipe is a great way to make a mouth-watering delight when ripe plums are plentiful. The vanilla flavor is subtle in this tart yet sweet cool treat.

Ingredients
8 Ripe Plums
3/4 Cups Vanilla Sugar
1 Vanilla Bean

Instructions
Chop and pit the plums. Discard the pits.

Puree the plums and push through a strainer. Combine with water, vanilla sugar, and cut open and scrape out the inside of a vanilla bean. Whisk together.

Chill the mixture, then freeze it in your ice cream maker per the manufacturer’s instructions.

If using an ice cream machine, follow the manufacturer’s directions to churn and freeze the sorbet.

Alternatively, freeze the mixture for 1 – 2 hours until it begins to set around its edges. Beat with a fork or food processor until smooth and then return to the freezer for about 2 hours until fully set.
