Vanilla Cookie Pizza

Remember Sugar Cookie Pizzas? Of course, you do! Here is an allergy-friendly version with no processed sugar! Usually, you could make the frosting from scratch (see below for a recipe), but Instead, this recipe uses Singing Dog Vanilla frosting mix. The Vanilla Cookie Pizza is topped with fresh fruit (we recommend strawberries, blueberries, blackberries, and kiwi because they will not oxidize easily). Follow this easy recipe, and in about 35 minutes, you’ll have a delicious vanilla cookie pizza with a sugar cookie crust that you and five friends or family members will love. This recipe also uses our Organic Vanilla to give the cookie crust a strong flavor along with the frosting. If you’re short on time you can use a cut-out sugar cookie mix instead of making your own crust.

This recipe substitutes traditional flour with cassava flour and tiger nut flour to be fantastic for gluten-free diets.  As always, we are impressed with this AIP diet-friendly recipe from Wendi’s AIP Kitchen.  Enjoy!

Ingredients

½ cup organic palm oil shortening 

3 tbsp honey 

2 tbsp vanilla extract

1 tbsp gelatin

1 tbps room temp water

2 tbsp hot (not boiling) water

¾ cups casva flour 

½ cup tigernut flour 

½ tsp baking soda

½ tsp sea salt 

1 singing dog vanilla organic vanilla frositng mix

Fruit of choice, for topping 

Instructions

  1. Preheat oven to 350ºF. In a large mixing bowl, cream shortening. Add honey and vanilla. Cream again.
  2. In a separate small bowl, sprinkle gelatin over 1 tablespoon room temperature water, and whisk gently. Add 2 tablespoons of hot water, and whisk vigorously until frothy. Add immediately to shortening, and cream again.
  3. In a third bowl, combine cassava flour, tigernut flour, baking soda, and salt. Add these dry ingredients to the shortening mixture, and stir to mix.
  4. Gather the dough together in your hands to form a ball. (the dough will be sticky.) Place dough ball on a piece of parchment paper. Press into a disk. Place another piece of parchment on top. Roll the dough between the two pieces of parchment to 10” in diameter. Transfer to a pizza pan, and remove the top layer of parchment, but leave the bottom layer. Bake for 12 minutes, or until golden brown. Let cool completely
  5. Make the frosting. Use Singing Dog Vanilla Frosting Mix.
  6. Spread frosting over the cooled cookie crust. Top with fruit. Cut slices and serve!
