Red Velvet Pancakes w/ Vanilla Maple Syrup

These light, tender, and fluffy gluten-free red velvet pancakes are delicious and mimic the taste of a red velvet cupcake. They are perfect for the holidays, a special treat, or even a fun breakfast. These pancakes have crushed Oreos and pure vanilla extract in the batter to give them a smooth rounded flavor. Not only that, but we used our vanilla syrup to make a tasty vanilla maple syrup. But wait, there’s more! These pancakes also have a  vanilla glaze that mimics cream cheese frosting. Imagine a red velvet cake, but in pancake form, and that’s what this pancake recipe is! You can take it one step further and add crumbled Oreo to your stack!

Red velvet cake comes from taking a vanilla cake and adding some cocoa and red food coloring to give the cake a red flavor with a chocolaty taste and a slightly tart edge. These pancakes are flavored the same way and are great for a family breakfast or even a special treat.

Making these gluten-free and dairy-free pancakes is pretty simple. First, gather the following ingredients;

Ingredients for the Pancake

  • Gluten-Free Flour
  • Cocoa
  • Baking Powder
  • Baking Soda
  • Egg
  • Sugar
  • Vanilla Extract
  • Flax Milk (or your choice of dairy-free milk)
  • olive oil
  • Crushed gluten-free Oreos
  • Red Food Coloring
  • Coconut oil (for cooking)

Ingredients for the Vanilla Maple Syrup

  • 1 part maple syrup to 1/4 part organic vanilla syrup

Mix ingredients together to make a vanilla maple syrup.

Ingredients for the Vanilla Drizzle

  • Powdered Sugar
  • Vanilla Syrup
  • Flax Milk

Mix all ingredients together to make a vanilla drizzle that mimics cream cheese frosting

How to Make Red Velvet Pancakes

These red velvet pancakes might look hard to make, but looks can be deceiving because these delicious pancakes are no more complicated than regular pancakes. All you have to do is mix all the pancake ingredients in a bowl using a whisk. Add the red food coloring, and fold in the crushed Oreos. Next, heat coconut oil in a pan and place the batter in circles 2 inches apart. Cook the pancakes until you see bubbles (approximately 2-4 minutes), then flip and repeat.

Ingredients
  

Red Velvet Pancakes

  • cup gluten-free flour
  • ¼ cup cocoa
  • teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 egg
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 2 cups flax milk
  • 1 teaspoon olive oil
  • 7 crushed gluten-free Oreos
  • coconut oil for cooking
  • red food coloring

Vanilla Maple Syrup

  • 1 part maple syrup
  • ¼ part organic vanilla syrup

Vanilla Drizzle

  • ½ cup powdered sugar
  • ½ tsp organic vanilla syrup
  • ½ tablespoon flax milk

Instructions
 

  • Mix all pancake ingredients in a bowl using a whisk
  • Add red food coloring. Mix very well.
  • Fold in crushed Oreos
  • Heat coconut oil in a pan, then place batter 2 inches apart
  • Cook until you see bubbles (about 2-4 minutes) and flip. Cook until done

Vanilla Maple Syrup

  • Add 1 part maple syrup to 1/4 part organic vanilla syrup and stir to combine

Vanilla Drizzle

  • Mix all ingredients together to make a vanilla drizzle that mimics cream cheese frosting
