How to Make Pistachio Ambrosia Fruit Salad

Ingredients:

Ambrosia Fruit Salad Ingredients featuring Singing Dog Vanilla

  • 2 3.4 oz boxes of instant pistachio pudding mix 

  • Two tubs of thawed cool whip (dairy or dairy-free works) 

  • 1 20 oz can of crushed pineapple (do not drain juice) 

  • 1 15 oz can mandarin oranges (drained) 

  • 1 10 oz jar stemless maraschino cherries (drained) 

  • 1/2 tsp alcohol-free vanilla extract 

  • 2 cups mini marshmallows 

  • 1 cup chopped walnuts

  • 1 cup shredded coconut 

Directions:

  1. In a large glass bowl, stir together both pudding mixes, the crushed pineapple, and the juice of the pineapple. The mixture will begin to turn green and thicken. 
  2. Fold both tubs of whipped cream into your pistachio pudding mixture. Using a rubber spatula, combine these two very well. 
  3. Then, add in your oranges, cherries, marshmallows, vanilla, walnuts, and coconut. Stir again until all combined well. 
  4. Cover and refrigerate for at least one hour before serving. You want the ambrosia salad to be thoroughly cold before serving.

Storage: pistachio ambrosia salad will remain good for up to three days in the refrigerator if you keep it covered.
