How to Make No-Bake Cashew Granola Bites
These granola bites can be made with just a few healthy ingredients:
- 1 1/2 cups crushed granola
- 1/2 cup cashew butter
- 1/4 cup date syrup (we like The Date Lady). Honey will work too
- 1/2 tsp alcohol-free vanilla
- 1 cup dairy-free, refined sugar-free chocolate chips
- 1 tbsp coconut oil
Follow these directions, and you will be able to make 12 no-bake granola bites:
- Use a mortar and pestle to crush the granola into smaller pieces.
- Mix cashew butter, vanilla, and date syrup in a medium bowl until well combined.
- Add the crushed granola into the bowl and mix everything well with your hands or a meatball maker.
- Roll the mixture into small balls. This recipe should make around 12 balls.
- In a clean bowl, melt the chocolate chips and coconut oil in the microwave on the chocolate setting. Microwave in 30-second increments, stirring well after each increment, until the chocolate fully melts.
- Line a tray with parchment paper.
- Using a spoon, place each cashew ball into the melted chocolate mixture. Make sure all sides of the ball are covered.
- Remove the ball from the chocolate mixture and place it onto the tray.
- Once all 12 balls have been coated in chocolate, sprinkle them with flake salt.
- Place the tray into the fridge for 30 minutes to an hour until the chocolate hardens.
- Once the chocolate has hardened, take the tray from the fridge and enjoy your delicious Cashew Butter and Granola Balls coated with chocolate!
