How to Make No-Bake Cashew Granola Bites

These granola bites can be made with just a few healthy ingredients:

  • 1 1/2 cups crushed granola
  • 1/2 cup cashew butter
  • 1/4 cup date syrup (we like The Date Lady). Honey will work too
  • 1/2 tsp alcohol-free vanilla
  • 1 cup dairy-free, refined sugar-free chocolate chips
  • 1 tbsp coconut oil

Follow these directions, and you will be able to make 12 no-bake granola bites:

  1. Use a mortar and pestle to crush the granola into smaller pieces.
  2. Mix cashew butter, vanilla, and date syrup in a medium bowl until well combined.
  3. Add the crushed granola into the bowl and mix everything well with your hands or a meatball maker.Cashew Granola Scooped with a meatball scooper

  5. In a clean bowl, melt the chocolate chips and coconut oil in the microwave on the chocolate setting. Microwave in 30-second increments, stirring well after each increment, until the chocolate fully melts.Melted Chocolate for Cashew Granola
  6. Line a tray with parchment paper.
  7. Using a spoon, place each cashew ball into the melted chocolate mixture. Make sure all sides of the ball are covered.
  8. Remove the ball from the chocolate mixture and place it onto the tray.
  9. Once all 12 balls have been coated in chocolate, sprinkle them with flake salt.Cashew Bites
  10. Place the tray into the fridge for 30 minutes to an hour until the chocolate hardens.
  11. Once the chocolate has hardened, take the tray from the fridge and enjoy your delicious Cashew Butter and Granola Balls coated with chocolate!
