Vanilla Waffle Cones

Our gluten-free vanilla waffle cones are fun and easy to make. They will take your favorite ice cream to the next level. In addition to being gluten-free, these waffle cones are also paleo, corn-free, dairy-free, and soy-free. So, if you have food-related allergies or dietary restrictions, these waffle cones are great for you! Finding gluten-free waffle cones in stores can be tricky. When Mena from Live Free & Thrive created this recipe, we were excited to provide our fans with an allergy-friendly version of the classic waffle cone.

To make these cones, you will need a waffle cone maker. A waffle cone maker is not the same as a Belgian waffle maker. You will have a waffle sandwich instead of a cone if you try to make waffle cones with a standard Belgian waffle maker. As cook times vary, it will be best to follow your waffle maker’s instructions for making the cones. However, if you would like a crispier, golden-brown cone, you will increase the cooking time. Similarly, if you’re looking for a softer cone, you will want to decrease your cook time by 1 to 2 minutes.

Once the cones finish baking, they will be hot. It is probably best if you don’t set them directly on your countertop. Many waffle cone makers will come with a mold for shaping the cones, but you form them by hand if needed. Just be sure to place them fold side down so that they form a strong seel. We recommend using a towel to save your hands while you shape the cones. You can also put 2-4 chocolate chips in the tip of the cone while it is still hot. The chocolate chips will melt into the end and make it so the ice cream doesn’t drip from the bottom of the waffle cone. After all, melted ice cream stains aren’t a good look.

Chocolate Variation

If you want to add a bit of chocolate to your cones, follow the recipe below and add 3 tablespoons of cacao powder to your dry ingredients. For the wet ingredients, you will add up to 3 tablespoons of maple syrup and an additional tablespoon of the Singing Dog Vanilla of your choice. This chocolate variation will give your cones a taste similar to our Vanilla Cocoa Frosting Mix.

Waffle Tacos

Mena also recommends using these waffles as a taco shell for a unique classic hard shell taco variation. You could also do what our friends at Conscious Creamery are doing and make these ice cream tacos!

Ingredients
1 1/2 Cup Cassava Flour
2 Teaspoons Paleo Friendly Baking Powder
1 Pinch Sea Salt
3 Eggs (room temp)
1/2 Cup Palm shortening (or melted coconut oil)
1/2 Cup Coconut Sugar
1/4 Cup Coconut milk or coconut water
1 Tablespoon Singing Dog Vanilla Extract

Instructions
Whisk together cassava flour, baking flour and sea salt into a medium bowl

Whisk together wet ingredients into a glass measuring cup

Pour the measuring cup of wet ingredients into the bowl of dry ingredients, stir until fully incorporated.
