Dairy free Vanilla Yogurt or, as our good friend Wendi from Wendi’s AIP Kitchen calls it, “faux-gurt,” this dairy free yogurt is a quick and easy way to start enjoying the smooth taste of yogurt without the dairy. If you’re missing real yogurt, but are on a dairy-free or AIP diet, you know options are limited. The process of making your own can be long and tedious. This “faux-gurt” is the perfect solution. It’s easy to make but there’s no dealing with messy bottles or struggling to make yogurt in an instant pot. The hardest part about making this is waiting for it to refrigerate overnight.
Wendi does suggest that you add probiotics from capsules or another source to get the probiotic benefits. Additionally, you can use our Alcohol Free Vanilla Flavor (Yes, it’s real vanilla!), or if you’re not worried about the small amount of alcohol in Pure Vanilla Extract, then you can use that instead. Use your best judgment or whatever best fits your dietary needs. Enjoy!

Ingredients
13.5 ounces organic heavy coconut cream (not condensed)
1 tbsp fresh lemon juice
1 tbsp arrow root startch
1 tbsp pure maple syrup
2 tbsp vanilla
Instructions
- Whisk coconut cream in a saucepan over medium high heat. When cream begins to simmer, whisk constantly for 2 minutes, then remove from heat.
- Place lemon juice and arrowroot starch in a small container with a tight-fitting lid. Shake vigorously. Whisk this mixture into the cream. It should thicken almost immediately.
- Stir in the maple syrup and vanilla. Transfer to glass jelly jars, or other lidded container. Refrigerate overnight. Stir before serving. (It will have sort of a pudding consistency at first, but thins as it warms.)
* Variation for probiotic benefit: When your Faux-gurt has cooled, but before refrigerating, add your own probiotics, such as the contents of a probiotic capsule.
