How to Make Chocolate Chip Baked Oatmeal Bars

This recipe for baked oatmeal bars needs the following ingredients:

Wet ingredients

  • 2 large eggs (room temperature)
  • 1/2 cup brown coconut sugar
  • 1/2 cup light brown sugar
  • 1/4 cup natural almond butter
  • 1/4 cup + 1 tbsp dairy-free butter (for an even healthier version, use refined coconut oil)
  • 1 3/4 tsp vanilla extract

Dry ingredients 

  • 1 1/2 cups quick oats (gluten-free, if desired)
  • 1 cup oat flour (gluten-free, if desired)
  • 1/4 tsp sea salt
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 cup mini chocolate chips (Or you may use just one type) 
  • 1/4 cup dark chocolate chips (Or you may use just one type) 
  • optional: more chocolate chips and sea salt for topping

 

Directions

Oatmeal Batter

  1. Prep: Preheat the oven to 350°F. Then, line an 8″x8″ pan with parchment paper, and gather your ingredients.
  2. Combine wet ingredients: Mix all the wet ingredients well in a large bowl.
  3. Add dry ingredients: Once the wet ingredients are mixed. Add all the dry ingredients (minus the chocolate chips, save those for last). Use a rubber spatula, and mix until combined (the batter will be thick). Then, fold in the chocolate chips.
  4. Bake: Pour the batter into your lined pan and spread evenly with a rubber spatula. Add chocolate chips or sea salt to the top if desired. Bake for 22-26 minutes, depending on how moist you want the inside to be.
  5. Cool and Serve: Allow the bars to cool completely before slicing. Serve as is, with almond butter drizzle, or as a dessert with ice cream on top.

Notes

You may use all brown sugar in place of the coconut sugar. If doing so, reduce baking time by a few minutes. 
Eggs can be replaced by using flax eggs. Combine 1 tbsp of flax meal for each egg with 2 1/2 tablespoons of water. Allow mixture to set for 3-5 minutes while it thickens.
