How to Make a Chocolate and Vanilla Cake 

Vanilla Cake Ingredients (Makes two 8″ round cakes)

Wet Ingredients 

  • 3/4 cup Greek yogurt (dairy free if needed)
  • 1/2 cup vegetable oil
  • 1/2 cup butter (softened)
  • 1 cup oat milk (room temp)
  • 1 tablespoon vanilla extract
  • 6 eggs (room temp)

Dry Ingredients

  • 2 3/4 cups flour (gluten-free if needed)
  • 3 tbsp corn starch (if you are corn-free, read here)
  • 2 1/4 cups sugar
  • 4 tsp baking powder (if you are corn-free, read here)
  • 1/2 tsp salt

Vanilla Cake Directions

Combine all dry ingredients in a bowl and whisk together. In the mixer, place butter and half of the sugar. Mix on medium-high until fluffy, about 1.5 mins. Then add the remaining sugar and oil and mix again until fluffy, about 1 min. Begin adding eggs one by one, mixing after every 2 eggs. Add in vanilla and mix lightly. Pour in half the dry ingredients and mix until combined. Then add in your milk and yogurt. Mix until combined. Finally, add in the remaining dry ingredients and mix on medium-high until all the way combined.

This batter will be wet and pudding-like. 

Bake at 350 for 30- 35 mins.

  • 1 tsp apple cider vinegar
  • 2 tsp vanilla extract
  • 1/4 cup brown sugar
  • 2 eggs
  • 1/3 cup vegetable oil
  • 2/3 cup boiling water

  • 3/4 tsp baking powder
  • 1/2 cup cocoa powder
  • 3/4 cup + 2 tbsp flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Chocolate Cake Directions

In a mixing bowl, combine all dry ingredients and whisk. Add in eggs and oil, then mix on medium until combined. Add sugars, vanilla, apple cider vinegar, and water. Mix on medium-high until well combined, about 3-4 minutes. Evenly fill each cake pan to ensure even baking. Bake for 30-35 minutes.

Allow the cakes to cool for 1 hour before frosting. 

AssemblyPlace one vanilla layer top down, then frost with vanilla frosting on the top. Next, place the chocolate layer top down. Frost again with vanilla. Then add the 2nd vanilla cake layer and frost with chocolate frosting on the top and around the sides. Shaved chocolate pieces are optional.

Make the Chocolate Cake

    ⅔ cup sugar, 1 tsp apple cider vinegar, 2 tsp vanilla extract, ¼ cup brown sugar, 2 eggs, ⅓ cup vegetable oil, ⅔ cup boiling water
  • Mix on medium-high until well combined, about 3-4 minutes. Evenly fill each cake pan to ensure even baking.

Bake

  • Bake all 3 cake rounds at the same time for 30-35 minutes at 350 °F

Assembly

  • Place one vanilla layer top down, then frost with vanilla frosting on the top. Next, place the chocolate layer top down. Frost again with vanilla. Then add the 2nd vanilla cake layer and frost with chocolate frosting on the top and around the sides. Shaved chocolate pieces are optional.
