Copycat Frosted Sugar Cookies:
Do you remember going to the grocery store as a kid and wanting those Lofthouse sugar cookies with a thick layer of frosting on top? Of course, you do! You either love or hate them, but everyone knows about these cookies. If you love them, then this recipe is perfect for you. The texture is so soft and fluffy that every bite will melt in your mouth. Your friends and family will taste the difference!

Although this recipe calls for all-purpose flour, you can easily replace that with an allergy-friendly/gluten-free alternative. We highly recommend Josie’s Best Gluten-Free Mixes if you’re looking for gluten-free. Josie’s mixes are fantastic, and if you love breakfast or do a lot of baking, you should seriously consider joining Josie’s Breakfast Club. We also recommend using our Organic Vanilla Frosting Mix to save you the time of making frosting. The best part is adding a little color to the frosting will make these sugar cookies fit any and every occasion. Lastly, we used our Organic Pure Vanilla Extract, but any Singing Dog Vanilla product will work.

Ingredients
3 Cups all purpose flour (or gluten free/allergy friendly alternative)
2 Teaspoons baking powder
1 Cup butter (2 sticks)
1 Cup sugar
1 large egg
2 Teaspoons vanilla extract
1 Package vanilla frosting mix
Instructions
Preheat over to 400F. In a large mixing bowl, whisk flour and baking powder together, and then set aside.
In the bowl of a stand mixer with the paddle attachment, beat the butter and sugar until it’s light and fluffy. Then, add the egg and vanilla extract. (If you don’t have a stand mixer, a handheld mixer will work fine.)
Turn the mixer to low and gradually add the flour mixture. Beat until just combined. Place a piece of plastic wrap on a clean surface, then transfer half of the dough onto the plastic wrap. Slightly shape the dough into a disk. Cover with another piece of plastic wrap on top. (This step would prevent the dough from sticking onto the rolling pin.)
Remove the plastic wrap and roll the dough to 1/4-inch thick. Slightly dust a 2-inch round cookie cutter with flour and stamp out the dough. Place cut-out dough on a Silpat/parchment paper-lined baking sheet. Bake for 6 to 8 minutes, or until the bottom of the cookie is slightly golden brown. Cool on the wiring rack completely before adding frosting.
